Two on Tuesday
Today was a cold, wet, dreary day. We were hoping to do the Tuesday group run again, but not in this weather. I did do weights at lunch. I was going to just do shoulders and abs, but ended up doing shoulders and back as a super set because I changed my mind on abs thinking I could do the one on the DVD with the step I was planning for after work. Anyway.....

After work I did 3 combos from Cathe's Low Impact Circuit - Cardio Only Premix then the abs from that same workout. I also stretched for a bit as my legs were feeling a bit tight.
Well, it should be Taco Tuesday, but we're low on food because we thought we were going to be out last weekend and haven't made it to the store yet. It's a super yuck kind of day here - the kind that screams for soup. So I thought a Creamy Tofu Tomato Soup with Grilled "Cheese" Sandwiches would be good. Oh, problem? Bread. I did have some small whole-grain wraps though so the sandwiches are more like quesadillas...quesandwiches anyone?
The last time I tried a creamy tomato soup, I used cannellini beans. Jason didn't like it at all. I loved though. But, I suppose I should try to make something we both will eat. This time I decided to use silken tofu to make it creamy. Cashew cream would also work.
Creamy Tofu Tomato Soup
1/4 red onion, diced
1 package extra firm silken tofu
1 28oz can no-salt diced tomatoes
1/4 cup vegetable broth
Fresh basil (to taste)
To taste: salt, pepper, parsley, garlic powder
In soup pot, saute onion until soft. Add in tomatoes and spices. Allow to heat through.
Transfer to blender and puree with tofu and basil until smooth (may have to do in batches).
Transfer back to soup pot and allow to simmer so the flavors can meld and soup begins to thicken, may need to add in small amount of broth if too thick.
Basil Spinach Grilled Quesandwiches
Vegan cheese of your choice
Pre-heat a large non-stick skillet or grill pan. Place tortilla flat and add "cheese" then add toppings to one half of the tortilla and fold over.
I must say that this soup turned out so well. It had a great texture and the flavors were mild, but full. I did top with roasted chickpeas just for some crunch. Tempeh bacon crumbled on top would have been really good as well.
