Sunday Beach Day

Friday Follow Up
First off, I need to go back to Friday's post and thank everyone for their comments and travel stories! I apologize for not responded to each comment like I normally would. But, I know you all will cut me some slack while I'm on vacation.


First Vacation Dinner
We started our vacation off with a nice Roasted Veggie Salad. After close to 9 hours in the car, we wanted a dinner that was loaded with veggies and that was healthier. We roasted new potatoes, red, orange, and yellow bell peppers, squash, zucchini, and red onions and served over a bed of spinach and a spring salad mix. Of course, had we had a grill (and it wasn't raining) we would have grilled all the veggies.

 
Sunday Beach Day
This morning we got up and eased into the day. I had my breakfast (oatmeal with bananas and peanut butter) out on the balcony. I firmly believe that's how I should wake up and eat every day. We decided to take our workout to the beach. We ran just under 25 minutes. Running on the beach is a killer workout. The only downfall...tender toes from the sand. But it was sooooo worth it.

After the run, we spent about 3 hours just sitting out on the beach soaking in the view. I couldn't even read my book because the view and sounds were just too wonderful to ignore. It was incredibly windy today.

After a while I began to feel just completely abraded by the wind and sand. We needed to make a trip to Target, so we packed it up, cleaned up, and headed out for errands (just in time for the afternoon heating shower).

For dinner, we had Black Bean & Quinoa Burgers (recipe here) with sweet potato "fries." We enjoyed the meal on the balcony. I think every dinner should be this way.

  1. Looks amazing! And love that you can cook your meals - that's such a bonus on a vaca, where your "normal" eating usually suffers. Awesome!

    Did you run on the beach without shoes?
    I LOVE running on the beach & you are totally right- it is a GREAT workout with the resistance from the sand.

    I am so jealous of your run on the beach. I grew up on lake Michigan and used to run on the beach everday. That is something I really miss.

I Run to Feel Alive

Today is National Running Day . Guess what I did this morning? Cycling? Nope. Lifting? Nope. I bet you thought kickboxing right? Nope. Running? But of course! I actually sort of planned my running days this week just so I could participate this year. I didn't get to run last year and didn't even know about it the year before. But running has become such an integral part of my life and who I am, that I couldn't miss this year. Basically, I run to feel alive . It calms me, it helps me work through life, it's often a reason to get out of bed. No matter how tough a run is, it makes you feel ... period. My plan was to get in 5 miles (got in 5.5 actually). It was about 10 degrees warmer this morning and definitely more humid. That always makes for a tougher run. We decided to take a different route today. Vacation Day 2 - Running, Reading, Relaxing

Running This morning I woke up a bit before 7 am. Of course, we had gone to sleep by 9....on vacation no less. I had thought I might try for an outdoor run, but the temps were already a humid 83 degrees by 8 am. So, I took my run to the treadmill. I had the Food Network to keep me occupied for a pretty decent 5 mile run. Running and watching tv isn't so bad ;-) I did 3 miles, then 4 1:00 athletic intervals then finished up another mile to round it out to and even 5. After stretching and rolling (yep, brought my TriggerPoint kit ), we packed up the cooler with lunch and headed down to the beach. Not a bad way to start the day if you ask me. Beach Time & Stair Cardio We set up our little umbrella camp and proceeded to just relax. I was excited to start one of the books I brought along with me: Alice Sebold's The Almost Moon . I've read her memoir, Lucky , and her first work of fiction, The Lovely Bones . . We were out for a few hours before taking a break.
